Healthy Indian Recipe: Chhole (Chickpea Curry)

Chhole (Chickpea Curry)

Ingredients:

  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 1 tablespoon vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 medium tomatoes, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 cup water
  • Fresh cilantro for garnish

Instructions:

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add chopped onions and cook until soft and translucent.
  3. Add minced garlic and grated ginger to the skillet and cook for another minute until fragrant.
  4. Stir in chopped tomatoes and cook until softened and released their juices.
  5. Add ground cumin, ground coriander, turmeric, cayenne pepper, garam masala, and salt to the skillet. Cook for a minute to toast the spices and bring out their flavors.
  6. Add the drained and rinsed chickpeas to the skillet and stir to coat them with the spice mixture.
  7. Pour in the water and bring the curry to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
  8. Taste the curry and adjust the seasoning if needed. Add more salt or cayenne pepper according to your preference.
  9. Garnish the chickpea curry with fresh cilantro before serving.
  10. Serve the chickpea curry hot with steamed rice or naan bread.

This quick and easy chickpea curry is a perfect weeknight dinner option that is both healthy and satisfying. Enjoy the flavors of Indian cuisine in just 20 minutes!
